Bistek is a savory Filipino dish usually with beef, soy sauce, citrus, pepper, and onion. I veganized it by using portobello mushrooms, tofu, and potatoes. Bistek is similar to Filipino Adobo, except Bistek has fewer seasoning. No fuss, just a simple, satisfying dish for any time of day.
My version has no meat and no animal products. It’s best enjoyed with a side of rice, but you may also eat it with bread, tortilla, or pita, or whatever carbs or gluten-free option you prefer.
Vegan Bistek Recipe
Ingredients
- 3 tablespoons cooking oil (I suggest mixture of canola and olive oil)
- 1 russet potato peeled and thinly sliced
- 8 pieces portobello mushrooms, sliced into strips
- 8 ouces extra-firm tofu, thinly sliced and fried
- 1 yellow onion, peeled and cut into rings
- ¼ cup soy sauce (adjust to taste depending on soy sauce brand)
- 1 dash lemon juice
- dash of freshly cracked pepper
Instructions
- Heat medium-sized pan over medium heat and pour cooking oil. Once hot, fry potatoes until crisp.
- Remove potatoes and season with salt, pepper, and lemon.
- Fry mushrooms on all sides and season with pepper and lemon juice.
- Add tofu and onions.
- When onions and mushrooms are tender, add potatoes back to the pan.
- Pour soy sauce and adjust seasoning to taste.
- Cook for another 3-5 minutes and turn off heat.
- Serve hot preferably with rice on the side.
