The Fall season rolls in and the soup craving starts. Good thing for us bloggers, cooks, and recipe hunters, we are surrounded by great soup recipes online. One of these amazing recipes is Roasted Tomato and Lentil Soup with Pepita Gremolata from my good friend, Ann at AnUnrefinedVegan.com
I followed each instruction except I used Chana Dal instead of red lentils. I also used red miso paste instead of white.
The process was quite meticulous but simple. Then again, most delectable dishes are. You’ll taste the difference in the dish when it’s cooked with great thought and care in mind. This one definitely brought it out. I’m not sure why it didn’t look as red as Ann’s, maybe it’s the brand of tomato paste I used.
In any case, after combining all of the blended ingredients, and cautiously stirring and adjusting the spices, I took a sip. I had an out of body experience, the soup blew me away! From the complex flavors to the texture, everything hits the right spot. Then I got mad at myself for being SO GOOD then I realized it’s not even my recipe hehe.
